Mini Muffins - Gluten-Free Bites

  • 2 eggs
  • 1/2 of maple syrup 
  • 1/2 cup of strong tea  
  • 1/4 of olive oil
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of cinnamon (optional)
  • 2 cups of Almond flour
  • 1/2 cup of greek yogurt 
  • 5 teaspoons of icing sugar 

Heat the oven to  365°F. Brew a half cup of tea and leave to cool. In a large bowl, mix together the eggs, maple syrup, olive oil, and tea; whisk together until well combined. Add the flour, baking powder, and cinnamon; continue whisking until a uniformed mixture is obtained. Divide the mixture evenly among the mini muffin cups. Bake ~20 mins, until the centre is set and a toothpick inserted into the middle comes out clean. Let cool. Next step is optional: combine together the yogurt and icing sugar, pour over muffins. Enjoy.
