Almond Gluten-Free Cookies

  • 2 cups of almond flour
  • 2 teaspoons baking powder
  • 1/4 cup softened butter 
  • 1/2 cup sugar 
  • 1 egg
  • 2 tablespoons of vanilla greek yogurt 

In a bowl, whisk together the flour and baking powder. In a second bowl, whisk together the sugar and the softened butter. Whisk in the egg until well combined. Add the yogurt and stir to combine. Add the flour (from the first bowl) to the second bowl butter and stir to combine. Chill the dough for at least one hour.

Heat the oven to  350°F. 

Using a tablespoon place the rounds of dough on the prepared pan about 3 inches apart. Bake for 12-15 mins or until golden brown. Enjoy.
